Nut Butter, Strawberry, & Banana Quesadillas
Ingredients
- 2 Tortillas
- 1/2 – 1 Banana
- 2 – 4 Strawberries
- Nut Butter of Choice
- Strawberry Jam
Directions
- Over medium heat, preheat a skillet/pan large enough for your tortilla
- Spread the peanut butter on one side of a tortilla
- Spread jam on one side of another tortilla
- Make enough banana and strawberry slices to cover the bottom of one tortilla
- Place the other tortilla on top of the first tortilla
- Cook in the pan until the bottom is crisp
- Flip over and cook the other tortilla until crisp
- Remove from pan and cut into triangles
Broccoli Cheese Bites
Ingredients
- 15 oz Can Chickpeas
- 1 ½ C Quinoa – Cooked
- 1 ½ C Broccoli – Chopped & Boiled
- 1 C Cheddar Cheese – Shredded
- 2 tsp Garlic Powder
- 1 tsp Thyme
- 1 tsp Basil
- 1 tsp Onion Powder
- ½ tsp Salt
- ½ tsp Black Pepper
- ½ C Water
Directions
- Preheat oven to 350° F and line a baking tray with parchment paper, lightly greased
- Add all the ingredients into a food processor, blend until combined with consistent texture
- You may need to do this in batches; add water if necessary
- Form mixture into balls with your hands
- Place each ball on the baking sheet and flatten them
- Bake 20-25 minutes until golden brown
- Cool before eating
Raisin Cinnamon Sushi
Ingredients
- Apple – Grated
- Carrot – Grated
- Raisins
- Cream Cheese
- Cinnamon
- Whole Wheat Tortilla Wraps
Directions
- Lay out tortillas
- Spread ¼ cup cream cheese on each tortilla
- Sprinkle ¾ teaspoon of cinnamon on top of cream cheese
- Add grated carrot, dividing it evenly across tortillas
- Add grated apple, dividing it evenly across tortillas
- Add ¼ cup raisins to each tortilla, spreading them evenly
- Roll tortillas as tightly as you can
- Cut each tortilla into six slices
Yogurt Raspberries
Ingredients
- Fresh Raspberries
- Greek Yogurt – Plain or Vanilla
- Piping Bag or Ziploc Bag
Directions
- Wash raspberries
- Put yogurt in the piping bag
- If using a Ziploc, cut a hole in one bottom corner for the yogurt to go through
- Pipe yogurt into raspberries
Tip: Make these a day ahead and store them in the fridge
